Let’s talk about them potatoes again, it’s been too long!
Remember how I said you can bake ’em too? Jackson potatoes are the deluxe version of baked potatoes. First, you bake the potatoes for about an eternity, until you feel like you can’t take it any longer because you’re dying of hunger, and then you wait for about another miserable 15 minutes or so (or, you take my advice from this post and plan ahead, meaning don’t start cooking last minute). Then you cut the potatoes in half and scrape out the insides and mix this mush with butter, canola oil, red onions, grated cheese (preferably something with a distinct taste), parsley and fried bacon. Season with lemon juice, salt and pepper. Then you put the mix back in the potato shell, top it with some more cheese (come on now, don’t be shy, it’s called comfort food for a reason!) and gratinate until the cheese has melted. Dee-licious.
